At La Cale, cocktails are designed to follow the rhythm of the evening. Some are bright and refreshing enough to begin the night, while others become slower, richer and more contemplative as the music settles in. Rather than chasing novelty for its own sake, we build our menu around familiar flavours interpreted through modern techniques — clarification, infusions, house-made syrups and carefully balanced ingredients.

Alongside timeless classics, our signature creations draw inspiration from both Mediterranean and Moroccan influences, making room for ingredients such as orange blossom, dates, hibiscus and jasmine whenever they genuinely contribute to the character of the drink.

Every cocktail is crafted to be approachable, balanced and memorable — whether it's your first glass of the evening or your last.

Signature Cocktails

Captain's Sin

One of the most technical cocktails on the menu. Whiskey and amaretto meet passion fruit, coconut and orange blossom before being clarified into a silky, crystal-clear drink that reveals surprising depth beneath its appearance.

Mule Overboard

A fresh reinterpretation of the mule, built around house-infused gin with ginger and cucumber, finished with limoncello and sparkling citrus. Designed for the first records of the evening, when conversations are still louder than the music.

Orient Express

A refined house creation where gin, white peach, jasmine and fresh lemon come together in perfect balance. Delicate yet expressive, it reflects our preference for cocktails that reveal themselves gradually rather than all at once.

Hot Lips

Our boldest signature. Jalapeño-infused tequila, pineapple and vanilla create a cocktail where spice meets tropical sweetness without overpowering the palate.

Boussa Nova

Rum, banana and toasted hazelnut combine in a smooth, comforting cocktail with remarkable depth. Rich without being heavy, it's the kind of drink that naturally belongs later in the evening as conversations slow and the atmosphere settles in.

Barbe Noire

Made for the later hours. Vanilla-washed rum, coffee liqueur, date syrup and cinnamon foam come together in a cocktail inspired by warmth, spice and slow evenings.

Local & seasonal

Our menu evolves throughout the year, but certain ingredients naturally return because they reflect both our surroundings and the flavours we enjoy working with.

Orange blossom, dates, hibiscus, jasmine, fresh herbs and citrus appear throughout the menu — not as decoration, but because they bring freshness, fragrance and depth to our cocktails.

Combined with house-made infusions, clarified juices and carefully prepared syrups, these ingredients allow us to create drinks that feel rooted in place while remaining balanced, elegant and easy to enjoy.

Behind the Bar

The bar at La Cale follows the same philosophy as our music programming. We respect the classics, but we don't believe they should remain frozen in time.

Instead, we reinterpret familiar recipes through modern techniques, seasonal ingredients and thoughtful preparation, always favouring balance over excess.

Just as our selectors build an evening one record at a time, every cocktail is intended to accompany a particular moment — from the first drink shared with friends to the final round before heading upstairs to the dance floor.
